4-5 Small Tomatoes or 3 Large Tomatoes (any Variety)
Salt
2 cloves garlic
Handful basil (1/2 cup- 1 cup, depending on taste preference)
2 T Olive Oil
1 T Balsamic Vinegar
1/2 c. chopped fresh mozzarella
Bread of choice (we like Volker's Asiago)
-Remove seeds from tomatoes and chop finely. If you don't remove seeds your bruschetta will still taste great, but be a little bit watery.
- sprinkle with salt (we use freshly ground sea salt) and let sit 5-10 minutes
- mince garlic and add to tomatoes
- Chop Basil and add tomatoes
- Add chopped mozzarella
- add Olive Oil and Balsamic
Stir Gently. Let sit and marinade min. 10 minutes. In the meantime slice bread very thinly- 1/4" and grill till lightly toasted.
Top bread with bruschette, or serve side by side.
